Gluten Free Coconut Pineapple Fruit Shake

Fruit shakes make an ideal gluten free breakfast or snack.  This recipe combines pineapple and coconut and adds a few extras to make it filling and healthy!

What you’ll need:

  • A blender, preferably a Vitamix
  • Fruit
  • Flax seeds and/or chia seeds
  • 1 small or half large pineapple
  • 1/3 cup coconut milk
  • 1 Banana
  • Protein powder (rice, hemp, pumpkin etc. protein powder)
  • Cocoa powder

Method:

Place the seeds in the blender.  This must be done first.  Turn the blender on high speed.  Do not turn it off until seeds have been reduced to a fine powder.  If you turn the blender off, the partially milled seeds will fall below the blades and stay there, even when you turn the blender back on.

Cut up the fruit into large chunks and place into blender.  Add coconut milk.

Add protein p0wder and cocoa to the top of the fruit.

Turn on blender and increase rate to mid to high speed.  After 10 to 20 seconds, a uniformly smooth smoothy will be ready to eat.

Note that pretty muck all ingredients are optional and can be substituted or omitted according to your taste.

This produces a thick smoothy because of the seeds.
