I am used to the increasing gluten free diet awareness in Canada and the US when I travel there. Years ago servers, cooks and chefs didn’t get it, and I frequently suffered gluten poisoning.

A gluten free diet, like any diet, requires that you read the ingredients. If you are not careful though, this will lead to accidental ingestion of gluten.
Reading the ingredients before you buy each new food item is tedious and time consuming. But it gets easier over time as you learn to recognize safe products and brands and are able to buy them without further checking.
There is danger in taking this shortcut however, and it may lead to setting off your gluten allergy or triggering your celiac disease by unexpectedly exposing yourself to gluten.

Gluten free food on Emirates Airlines leaves a lot to be desired. I don’t really trust their gluten free diet meal plan, and my food did include gluten.
I flew with Emirates Airlines recently and ordered a gluten free meal. I’d have been better off bringing my own food, or starving.
