Ingredients<\/h3>\n

1 cup white glutinous rice
\n1 – 14 oz. can coconut milk (1-3\/4 cups)
\n1\/3 cup sugar
\n\u00bd tsp. salt
\n2 medium to large mangoes
\n1 tsp. toasted sesame seeds<\/p>\n

Instructions<\/h3>\n

  • Wash rice. Place in medium size bowl.<\/li>\n
  • Cover rice generously with cold water;<\/li>\n
  • Soak 4 to 6 hours.<\/li>\n
  • Drain well.<\/li>\n
  • Place in a colander or sieve with fine holes.<\/li>\n
  • Set colander on rack over water in a large pot;<\/li>\n
  • water must not touch rice.<\/li>\n
  • Cover pot;<\/li>\n
  • Bring water to a boil.<\/li>\n
  • Reduce heat slightly;<\/li>\n
  • steam rice 25 minutes<\/strong>.<\/li>\n<\/ul>\n

    Meanwhile,<\/p>\n

    • Open can of coconut milk. Do this carefully, without shaking.<\/li>\n
    • Spoon off \u00bc cup of thick milk from top of can.<\/li>\n
    • Place in small bowl, cover and<\/li>\n
    • Refrigerate.<\/li>\n
    • Stir remaining milk to blend.<\/li>\n
    • Measure \u00bd cup; reserve remainder for another use.<\/li>\n
    • Stir coconut milk<\/strong>, sugar<\/strong>, salt<\/strong> in small bowl till sugar is dissolved.<\/li>\n
    • Remove rice from steamer.<\/li>\n
    • Spoon rice into a 1-1\/2 quart baking dish.<\/li>\n
    • Stir sugar mixture into rice.<\/li>\n
    • Cover, return to steamer and steam 10 more minutes.<\/li>\n
    • Remove baking dish to a rack.<\/li>\n
    • Let rice cool, covered, to room temperature.<\/li>\n
    • Peel mangoes.<\/li>\n
    • Remove pulp from seeds; slice.<\/li>\n
    • Divide rice among 4 large dessert plates.<\/li>\n
    • Top each serving with 1 tbsp. reserved thick coconut milk.<\/li>\n
    • Sprinkle with sesame seeds<\/li>\n
