Sweet Potatoes<\/h3>\n

Yams<\/h3>\n

Yams are similar to sweet potatoes in many ways, but are not related as yams grow on a vine.\u00a0 They are sweeter, starchier and drier than sweet potatoes.\u00a0 They have less nutritional value and are sweeter.<\/p>\n

The skin of yams must be removed because they contain diocornine, a toxin.\u00a0 It is destroyed when cooking but is best removed.<\/p>\n

You can boil, mash, roast or bake yams.\u00a0 Or cut them into thin disks and dry roast them in the oven.<\/p>\n

Taro<\/h3>\n

Taro have dark shaggy skin and dark brown flesh streaked with faint purple lines.\u00a0 They have a mild but distinct taste.<\/p>\n

Taro is great boiled or in stews.<\/p>\n

Cassava<\/h3>\n

Cassava is used to make tapioca.\u00a0 The cassava root is also great as the basis of a gluten-free meal.\u00a0\u00a0 Cassava have brown waxy skin.\u00a0 They look like they should keep well for a long time, but they don’t.\u00a0 They will keep for a few weeks but don’t expect them to store as well as potatoes.<\/p>\n

Jicama<\/h3>\n

Jicama has sweet nutty flesh.\u00a0 It can be eaten cooked or raw and is good in salads.\u00a0 Or cook it much as you would a potato.<\/p>\n

Jerusalem Artichokes<\/h3>\n

Not to be confused with globe artichokes (from an unrelated plant) these tubers are from the sunflower family.\u00a0 They are at their best in the winter and early spring.\u00a0 They are always knobbly, some more than others.\u00a0\u00a0\u00a0 They keep well if stored in a cool dry place.<\/p>\n

They can be cooked in a similar manor to potatoes, although they are softer.\u00a0 They are also good in soups and stews.<\/p>\n

Root vegetables are a great source of gluten-free starch.\u00a0 Unlike other foods like gluten-free grains, peas, beans and similar types of food, root vegetables are handled by different equipment, and can be pealed, making them very low-risk as far as gluten contamination goes, and depending on how they are prepared.<\/p>\n

They are an excellent choice and safe gluten free food for home cooking, although when prepared at a restaurant, cross contamination could puncture your gluten-free diet.<\/p>\n
