Quinoa Tabouleh<\/p>\n

This Middle-Eastern dish is usually made with wheat<\/a>. This is a great shame if you are allergic<\/a> to wheat!<\/p>\n

Deprive yourself no longer! Here is a wheat-free, gluten-free<\/strong> version of Tabouleh made with quinoa<\/a><\/strong>!<\/p>\n

Ingredients<\/h3>\n

Quinoa<\/h4>\n

1 Cup quinoa<\/a> grain
\n1 +1\/2 tsp. Sea
salt<\/a>
\n1 \u00be cups water.<\/p>\n

Vegetables<\/h4>\n

2 cups finely chopped parsley
\n1 cup green onions, finely diced (including the green part)
\n1 small carrot, finely diced (about 1 cup)
\n\u00bd red pepper, chopped
\n\u00bd green pepper, chopped
\n\u00bd fresh mint leaves, finely chopped<\/p>\n

Dressing<\/h4>\n

\u00bd to \u00bd cup extra virgin olive oil
\n\u00bc cup lemon juice
\n2 garlic cloves, crushed or chopped<\/p>\n

Instructions<\/h3>\n

Quinoa<\/h4>\n

Put the quinoa, salt and water into a pot and bring to a boil on medium heat. Simmer on low heat for 20-25 min. This grain will foam when fully covered, so leave the lid slightly ajar. Keep an eye on it to avoid it drying
\nout. Cool.<\/p>\n

Vegetables and Dressing<\/h4>\n

Mix vegetables with quinoa, add dressing. Stir well. This may be kept in the refrigerator for a day or more to improve flavour.<\/p>\n

Serve on a platter with lettuce leaves and garnish with black Kalamata olives and thin slices of lemon.<\/p>\n
