The total so2 is equally as significant. A wine may have 10ppm free so2 but 350ppm total.
I think you’ll find many wines on the market have about 15ppm free, as they are often bottled around the 30ppm mark, but end at about 15ppm after a year or so in bottle.
Furthermore, red wine contains relatively low levels of S02, as red wine is much more microbially stable than white wine. So typical total S02 for reds are often between 80 to 130ppm while whites are more frequently 100 to 160ppm total. Obviously dependent upon wine style/type.
And….. organic wine is all well and good…. it is monitored in the vineyard side well…. but as soon as it hits the winery, you can pretty much do whatever you want with it…. fair bit of spin/hype misinformation going on if you actually think organic wine is ‘better’ for you. Yes, it can promote better vineyard management practices/care, and thus better grapes…. but ‘better’ for you…… no.

I am lactose intolerant and after a little research found that lactose can be used within the distillation process which may be a possibility for your hives.

Im not sure what type of wine it was, but I wonder if it was a combination of acidity of the fruit paired with wine sulfites. Any suggestions? I can eat red grapes without problem, and Ive had rose’ wine since this incident with no reaction.

low-sulfite wines

There are some wines with low sulfites. I doubt you’ll find any that are completely sulfite-free, because the yeast used to ferment the wine produces some sulfites.

Finding wines that are low in sulfites takes considerable research, which I may get a chance to do one of these days.
