Gluten-free: Replacing wheat with buckwheat

Good point! Buckwheat has a distinctive nutty taste and is very nutritious (much more than bread crumbs).

If you like a stronger taste, buckwheat is great. If you prefer something more neutral, rice is a great substitute for breadcrumbs in your traditional stuffing recipe.
