Does chocolate contain yeast?

Answer: yes and no, it depends.

The short answer is that chocolate, the ingredient and the bulk of high-quality chocolate bars, does not contain yeast.

However, some chocolate bars may contain yeast.

The main culprit is maltose and other similar ingredients. Maltose is a fermented product, usually made from barley. Fermentation in this case involves yeast.

Watch out for maltose in chocolate bars, candy bars, cookies, cakes - anything that has been sweetened. Apparently this is a more popular ingredient in the UK than it is in Canada or the United States (to be confirmed).
