Cooking fruit will prevent molds and yeasts from multiplying, but the proteins are left behind.

Consider cooking as a way of preserving fruit (before it starts to grow any significant mold or yeast, before it goes bad) but once it’s off, that’s it.

You can cut the bad bits out of most fruits and be OK.
